 Broiled Dill Salmon, Seared Broccoli, and Mashed Potatoes

Salmon is one of my favorite meals, so here is a variation of how to cook it. This time I added a nice dusting of chopped fresh dill, which is amazing with the fish. If you can find salmon at a good deal like I did then this meal is a must have. First you have the flakey and soft salmon with the perfect seasoning on top. Then you have seared broccoli that has a little salt and a crust of seared edges. Both add to the flavor of the broccoli. When it comes to mashed potatoes, I don’t have the time to peel, cut, boil, and mash potatoes, so I choose instant mashed potatoes from Idahoan. I think they taste very good when you add the right amount of butter.

What You Will Need:

Salmon Portion

Broccoli

Idahoan Mashed Potatoes

Milk

Butter

Olive Oil

Salt

Pepper

Lemon Pepper

Garlic Powder

Seasoning Salt

Instructions:

Place your salmon portion in a baking pan. Season the salmon with salt, garlic powder, pepper, a light coating of seasoning salt, and lemon pepper. Pour some olive oil over top of the salmon and incorporate with the seasoning along with your fresh dill. Turn your oven to broil and place your salmon in the oven. Set a timer for 10 minutes. Check it at 10 minutes, you want a golden crust around the edge. While the salmon is in the oven on the stove in a pan on medium high heat place your broccoli. I use frozen but it doesn’t matter. Place some oil in the pan and sear your broccoli. In a medium sized pan boil 2/3rd Cup of water with 3 tablespoons of butter. When that is at boil take off heat and add 1/3rd Cup of Milk and your instant mashed potatoes. I don’t measure the amount of instant mashed potatoes; I just go for the right consistency. When your salmon is golden brown on the edges, your broccoli is cooked and seared, and your mashed potatoes are the right consistency you’re ready to plate! Add some salt to the broccoli and it’s ready to eat.
